Ingredients:
- 1kg of ripe figs
- 2 packets of vanilla sugar

50g brown sugar - juice of 1 lemon
- 1-3 tablespoons cinnamon (to taste)
Preparation: Wash and hull
figs and cut into 4 .
In a large saucepan, combine figs, sugar, vanilla, brown sugar, cinnamon and lemon juice. Make stew over medium heat, stirring regularly for at least 40 minutes until the consistency of a sauce (the fibers of the figs must begin to separate).
Let cool slightly before serving. Serve with a drizzle possible cream.
The compote is even better the next day.
